Maple Parsnip Salad Recipe
Sweet root vegetables like carrots and parsnips are easily loved by children and adults alike. However, parsnips still remain a mystery to most. What is a parsnip, you may ask? A parsnip is very similar to a carrot - it’s a long cream-colored root with a mild, sweet, crunchy flavor. Parsnips contains a generous amount of potassium, fiber, and plenty of Vitamins C and E to help boost your immune system.
This easy recipe is fun to make, and healthy! The longer you leave your bowl in the fridge to marinate, the more flavor these delicious vegetables will soak up.
Ingredients:
3-4 large carrots, peeled
3-4 large parsnips, peeled
Fresh parsley - 1 or 2 sprigs
2 tablespoons pure maple syrup
2 teaspoons fresh lemon juice
Dash of ground nutmeg
Salt to taste
Instructions:
Washing and drying fresh produce is a process that children are sure to have fun participating in, so don’t forget to include them!
Cut the peeled carrots and parsnips in half, lengthwise (to avoid choking risks). Then, cut into chunks, and add to a medium sized bowl.
Add the fresh lemon juice, maple syrup, and dash of nutmeg to the bowl, and toss with a large spoon to coat evenly.
Add salt to taste, and garnish with fresh parsley leaves (remove from stems).
Serve immediately, or store in the fridge for 1-2 hours to allow the vegetables to soak up the flavors.
